I am going to take a turn at throwing a pork shoulder into the Houston Cougar Smoking Vault tomorrow.
Anyone with some pointers, and some discussion would be greatly appreciated.
I have been told to lather it up with mustard before I apply the rub. Maybe spritz with some apple juice/cider vinegar occasionally?
Cooking temp @ 225?
Any insights would be great. I am open to trying anything.
